{"id":555,"date":"2019-08-26T17:38:43","date_gmt":"2019-08-26T15:38:43","guid":{"rendered":"https:\/\/kokbok.igu.se\/?p=555"},"modified":"2019-08-26T17:38:43","modified_gmt":"2019-08-26T15:38:43","slug":"potato-and-gochujang-braised-eggs","status":"publish","type":"post","link":"https:\/\/kokbok.igu.se\/?p=555","title":{"rendered":"Potato and gochujang braised eggs"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/i.guim.co.uk\/img\/media\/a6d11c8ab9487dc427d07d2ad02ccded6914626f\/0_614_3723_3722\/master\/3723.jpg?width=300&amp;quality=85&amp;auto=format&amp;fit=max&amp;s=868b10ec9a7776a3e0e94d524ad46e03\" alt=\"Potato and gochujang braised eggs \"\/><\/figure>\n\n\n\n<p>Prep<strong>&nbsp;20 min<\/strong><br>Cook&nbsp;<strong>50 min<\/strong><br>Serves&nbsp;<strong>4 as a main<\/strong><\/p>\n\n\n\n<p><strong>3 tbsp olive oil<\/strong>, plus extra for greasing<br><strong>400g large baking potatoes<\/strong>&nbsp;(ie, 1-2 potatoes), peeled and cut into \u00bdcm batons<br><strong>1 small kohlrabi<\/strong>, peeled and cut into \u00bdcm batons (160g net weight)<br><strong>1 tbsp gochujang&nbsp;<\/strong><strong>paste<\/strong><br><strong>2 tsp white miso paste<\/strong><br><strong>2 small garlic cloves<\/strong>, peeled and crushed<br><strong>Salt8 eggs<\/strong><br><strong>1 lime<\/strong>, cut into 4 wedges, to serve<\/p>\n\n\n\n<p>For the salsa<br><strong>1 tbsp lime juice<\/strong><br><strong>1 tsp gochujang paste&nbsp;<\/strong><br><strong>2 tbsp oil<\/strong><br><strong>2 tsp chives<\/strong>, finely chopped<br><strong>2 tsp mixed black and white sesame seeds<\/strong>, toasted<\/p>\n\n\n\n<p>Heat the oven to 220C (200C fan)\/425F\/gas 7. Using a little olive oil, lightly grease a 28cm nonstick saute pan for which you have a lid, then put it the oven to heat for five minutes.<\/p>\n\n\n\n<p>In a large bowl, toss the first six ingredients and a quarter-teaspoon of salt until well coated (you may want to wear rubber gloves). Remove the pan from the oven, tip in the potato mixture and spread out evenly, then return the pan to the oven and bake for 25 minutes, rotating the pan once halfway, until golden brown and crisp on top.<\/p>\n\n\n\n<p>Use the back of a dessertspoon to make eight wells in the potato mixture, then crack an egg into each one. Cover the pan and return it to the oven for eight minutes, or until the whites are cooked and the yolks are still runny (if you like, use a small spoon and carefully peel away the white film over the yolks to reveal their colour). Season the eggs with a little salt.Advertisement<\/p>\n\n\n\n<p>While the eggs are cooking, mix all the salsa ingredients in a small bowl.
