{"id":592,"date":"2016-04-24T11:42:02","date_gmt":"2016-04-24T09:42:02","guid":{"rendered":"http:\/\/kokbok.igu.se\/?p=402"},"modified":"2016-04-24T11:42:02","modified_gmt":"2016-04-24T09:42:02","slug":"dairy-gluten-free-chocolate-avocado-cookies","status":"publish","type":"post","link":"https:\/\/kokbok.igu.se\/?p=592","title":{"rendered":"Dairy &#038; gluten-free chocolate avocado cookies"},"content":{"rendered":"<p>Makes six large cookies<\/p>\n<p>1 ripe avocado (when it\u2019s skinned and de-seeded we need around 100g)<br \/>\n1 large free-range egg<br \/>\n1 tsp vanilla extract<br \/>\n\u00bd tsp xanthan gum optional \u2013 without this, your cookie will be crumblier<br \/>\n1 tsp baking soda<br \/>\n150g light brown soft sugar or caster sugar<br \/>\n50g cocoa powder<br \/>\npinch of salt<br \/>\n50g gluten-free flour any combination of the following flours will work \u2013 standard gluten-free flour, rice flour, gram flour, quinoa flour<br \/>\n100g roughly-chopped dark chocolate over 70% cocoa solids should always be dairy free, but check the packet<\/p>\n<p>Preheat your oven to 180\u00b0C\/350\u00b0F\/gas 4 and line a baking tray\/sheet with parchment paper. Scoop your avocado into a large bowl and mash thoroughly until it\u2019s a smooth green goo. Once smooth, add the rest of the ingredients into the bowl and beat using good old muscle power with a wooden spoon, until a nice shiny consistent wet mix forms. It\u2019ll look like a very sticky and dark coloured cake mix rather than a firm cookie dough. If you taste a little of the mixture at this point, you\u2019ll be amazed at how \u201cgreen\u201d it tastes \u2013 it\u2019s literally like eating raw cabbage, but after baking, all of the vegetable taste is gone \u2013 thank goodness!Add most of your chocolate chunks, saving some of the larger pieces to press into the top of each cookie before baking. Using two metal spoons, dollop evenly sized round-shaped cookies onto your baking tray \u2013 larger is always better with these ones, and they don\u2019t spread much when baking. If you prefer a thicker, fudgier cookie, pile the mix high and bake for the full time, and if you like a thinner chewier cookie then spread them out more and bake for less.
