{"id":624,"date":"2021-10-24T18:35:01","date_gmt":"2021-10-24T16:35:01","guid":{"rendered":"https:\/\/kokbok.igu.se\/?p=624"},"modified":"2021-10-24T18:35:01","modified_gmt":"2021-10-24T16:35:01","slug":"624","status":"publish","type":"post","link":"https:\/\/kokbok.igu.se\/?p=624","title":{"rendered":"Spring chicken pie"},"content":{"rendered":"\n<ul class=\"wp-block-list\"><li>2 lemons&nbsp;<\/li><li>500 g Jersey Royals&nbsp;<\/li><li>\u00bd a bunch of fresh tarragon , (15g)&nbsp;<\/li><li>1 bunch of fresh flat-leaf parsley , (30g)&nbsp;<\/li><li>8 free-range chicken thighs , bone in, skin on, from sustainable sources&nbsp;<\/li><li>6 cloves of garlic&nbsp;<\/li><li>olive oil&nbsp;<\/li><li>50 g unsalted butter&nbsp;<\/li><li>2 tablespoons plain flour&nbsp;<\/li><li>400 ml organic chicken stock&nbsp;<\/li><li>2 teaspoons Dijon mustard&nbsp;<\/li><li>75 g watercress&nbsp;<\/li><li>5 sheets of filo pastry<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 190\u00baC\/375\u00baF\/gas 5.&nbsp;<\/li><li>Halve the lemons, quarter the Jersey Royals, then pick and finely chop the tarragon and parsley.<\/li><li>Put the chicken, unpeeled garlic cloves, lemon and potatoes in a large baking tray, drizzle with oil, season with sea salt and black pepper, then toss together.<\/li><li>Pop in the oven for 45 minutes, or until golden, crispy and cooked. Remove from the oven and allow to cool.&nbsp;<\/li><li>Melt the butter in a large non-stick pan until bubbling. Add the flour and stir for 1 to 2 minutes to form a paste, then slowly pour in the stock, whisking until thickened. Add the mustard, then season.&nbsp;<\/li><li>Once the chicken is cool enough to handle, remove and reserve the skin and discard any gristle. Shred the meat, discarding the bones.<\/li><li>Squeeze the garlic from its skins back into the roasting tray and squeeze over all the juice from the lemons and toss well.&nbsp;<\/li><li>Pour over the thickened stock and add the herbs and watercress. Check the seasoning, then finely chop the chicken skins and sprinkle over the filling.<\/li><li>Lay out sheets of filo on a clean surface and cut each one in half.
