Dygnsbrödet

Dygnsbrödet
Ingredienser 10 portioner
7 dl vetemjöl
1 ½ krm torrjäst
1 msk nymalt havssalt
2 dl vatten
½ dl ljus öl
1 tsk flytande honung
1 msk vitvinsvinäger
Tillagning
1. Börja med brödet ett dygn innan det ska vara klart.
2. Blanda ut torrjästen i lite vatten i en bunke.
3. Tillsätt resten av vattnet, ölen, honungen och vitvinsvinägern,. Blanda väl.
4. Häll i mjöl och salt i bunken. Blanda med en trässlev tills du fått ihop en deg.
5. Täck bunken med plastfolie och låt stå i kylskåpet i 12 timmar.
6. Lägg bakplåtspapper på en liten stekpanna.
7. Knåda degen lätt några gånger på en mjölad yta och forma den till en rund boll och lägg på stekpannan.
8. Lägg en skål över stekpannan så det blir tätt. Låt jäsa i rumstemperatur i 10-12 timmar.
9. Sätt ugnen på 250 grader.
10. En halvtimme innan du ska baka sätter du in en liten rund stekgryta i gjutjärn i ugnen.
11. Mjöla överdelen av degen lite lätt och skär några skåror i den.
12. Ta ut stekgrytan när den blivit riktigt het.
13. Lyft över degen med bakplåtspappret till stekgrytan så att den fortsätter att ligga på pappret i grytan. Lägg på locket och ställ in grytan i ugnen.
14. Sänk värmen till 225 grader och grädda i 25-30 minuter.
15. Ta av locket och grädda i ytterligare 20-25 minuter tills brödet är klart och har fått en fin färg.
16. Lyft ur brödet med hjälp av pappret och låt svalna på galler utan att vara övertäckt.

Kanel- och lingonkaka

Ingredienser
3 dl vetemjöl,
180 g
2 msk strösocker
125 g smör
1 st äggula
Fyllning:
3 st ägg
2 dl strösocker
2 dl vispgrädde
2 msk vetemjöl

1 tsk vaniljsocker2 tsk kanel1 dl lingonsylt

Garnering:
lingon
1 msk florsocker

Tillagning
1. Hacka ihop mjöl, socker och smör till en grynig massa.Tillsätt äggula och arbeta ihop till en deg.
2. Tryck ut den i en form med löstagbar kant, ca 24 cm i diam.Låt vila i kylen ca 30 minuter.
3. Sätt ugnen på 200°
4. Vispa ägg och socker pösigt.Rör i resten av ingredienserna till fyllningen. Häll den i pajformen.
5. Grädda på nedersta falsen ca 40 min. Låt kakan kallna.
6. Garnera med lingon och sikta över florsocker vid serveringen.

Aniskakor 2

Kakor:

75 g smör

1 dl strösocker

2 msk sirap, ljus

1 st ägg

3 dl vetemjöl

0,5 tsk bakpulver

2 tsk anis, mortlad

1 msk vaniljsocker

1 dl strösocker, till dekoration

Tillagning

1 Sätt ugnen på 175 grader. Rör smör, socker och sirap poröst med elvisp. Vispa ner ägget. Blanda mjöl, anis, vaniljsocker och bakpulver och rör ner i smeten. Arbeta ihop till en deg.

2 Rulla degen till 30–35 stycken kulor, cirka 1,5 cm i diameter. Doppa ena sidan i strösocker och lägg kulorna ganska glest på bakplåtsklädda plåtar. Platta till kulorna lätt med handen.

3 Grädda mitt i ugnen i cirka 20 minuter, eller tills de är gyllenbruna och hårda. Låt svalna på galler.

Aniskakor 1

2 tsk hel anis
100 g smör, kallt, i bitar
1,25 dl strösocker
3,5 dl vetemjöl
1 tsk bikarbonat
1 dl pistaschnötter, hackade
2 msk ljus sirap
Tillagning
1. Sätt ugnen på 200°. Stöt anisen och blanda ingredienserna.
2. Dela degen i delar och forma ca 30 cm långa rullar.
3. Lägg dem på smord plåt, platta till dem något och grädda mitt i    ugnen ca 12 min.
4. Skär längderna på plåten i 3 cm breda kakor på snedden.

Halloween cookies

Halloween cookies recipe

Serving instructions

1. Makes about 20-25 cookies |

2. Takes 40 minutes to make, 8-10 minutes to bake, plus chilling |

Ingredients

1. 100g softened butter

2. 100g golden caster sugar or light soft brown sugar

3. A few drops of vanilla extract

4. 1 large free-range egg

5. 240g plain flour, plus extra for dusting

6. 20g cocoa powder

7. 20-25 lolly sticks (optional)

8. Smarties, to decorate

Method

1. 1. Preheat the oven to 180°C/fan160°C/gas 4. Put the butter, sugar and vanilla in a large bowl and use a wooden spoon or an electric hand whisk to mix together until pale and fluffy. This is called ‘creaming’. Add the egg and keep beating the mixture until well mixed. Sift over the flour and cocoa powder and mix everything together with a metal spoon. Wrap the dough in cling film and put in the fridge for 20 minutes.

2. 2. Sprinkle a little flour over a work surface. Cut the dough into 4 and roll each piece to 3-4mm thick.

3. 3. Cut out shapes using cookie cutters, re-rolling any trimmings, then carefully lift onto the baking tray. If you want to make them into lolly cookies, carefully push a lolly stick into the bottom of each cookie. Decorate with Smarties.

4. 4. Bake for 8-10 minutes, depending on the size of the cookies, until golden and cooked. Cool completely on a wire rack.

Freaky Fingers & Brain Balls

Freaky fingers

100g caster sugar
100g butter
1 egg yolk
200g plain flour
½ tsp vanilla extract
20 blanched almonds
red food colouring , paste is best (optional)

Brainballs

85g popping corn
1 tbsp vegetable oil , plus extra for shaping
25g butter
85g marshmallow

Method

1. For the freaky fingers, place the first five ingredients and a pinch of salt in a food processor and whizz just until a ball of dough forms. Tear off a golfball-size piece of dough and use your hands to roll into finger-size cylinders – you should get about 20. Place on a baking sheet lined with baking parchment – a little apart as they will spread during baking. Use a knife to make a few cuts, close together, for the knuckles. Place an almond at the end of each finger and trim away excess pastry around the edge to neaten. Place in the fridge for 30 mins, heat oven to 180C/160F/Gas 4, then bake for 10-12 mins just until firm. Leave to cool a little, then paint the almond with food colouring, if you like. Makes 20.

2. For the brainballs, place the popping corn and vegetable oil in a large pan set over a medium heat. Stir the kernels around the pan to coat in the oil. When the kernels starts to pop, place a lid firmly on top and turn the heat down to low. Cook, shaking the pan often to stop the popcorn burning or sticking, until the corn has stopped popping, about 5 mins. Tip into a bowl, discarding any unopened kernels. Heat butter and marshmallows over a low heat until melted. Pour over popcorn and mix well until coated. Lightly rub oil over your hands and shape the popcorn into small balls. Set aside on a tray lined with baking parchment and leave to set. Makes 10.

3. For the bloodthirsty squash, fill up a kitchen glove with water, secure the end with a freezer clip or rubber band and place in the freezer overnight. When ready to serve, stir together 1 litre each lemonade and cranberry juice with the juice 3-4 limes. Pour into a punch bowl. Remove the hand from the freezer and use scissors to carefully take off the glove. Place in the punch bowl and serve. Serves 10.

Malloween ghosts recipe

  • 100.0g unsalted butter , plus a little extra for the tin
  • 300.0g pink and white marshmallows
  • 200.0g rice cereal (try Rice Krispies)
  • 300.0g white chocolate , melted, for coating
  • a little melted plain chocolate or black writing icing, to decorate
  • wooden lolly sticks or coffee stirrers (stirrers are a little more bendy)

Method

1. Butter, then line a 30 x 20cm Swiss roll tin with baking parchment. Melt the butter in a large non-stick saucepan. Tip in the marshmallows, then melt very gently for about 10 mins, stirring regularly to make sure they don’t stick.

2. Once smooth, stir in the cereal until all of the grains are coated. Spoon the mix into the tin, then press down to make it flat and smooth. Chill until cool and set. Can be made up to 2 days ahead.

3. Make the ghost shapes two ways. Cut the cake into rectangles, then use a sharp knife to round off the tops and zig-zag the bottoms. Or, to make flying ghosts, stamp out circles about 9cm across and use a sharp knife to divide into teardrop-shaped ghosts. Cut pieces of leftover cake to make arms, if you like.

4. Carefully push a lolly stick into the bottom of each ghost. Put onto a cooling rack. If you’ve made arms, stick them on using a little white chocolate, then spoon over more chocolate and paint it over and down the sides of the ghosts with a pastry brush. Leave to set. Pipe on eyes with the plain chocolate or icing.

Scary skull biscuits

Makes 16 sandwiched or 32 single biscuits

Freezable

  • 200g unsalted butter , very soft
  • 140g golden caster sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 300g plain flour , plus extra for rolling
  • 100g raspberry jam (or use lemon curd or chocolate spread)

FOR THE ICING

  • 140g icing sugar , sifted
  • food colourings (optional)

Method

1. Heat oven to 180C/160C fan/gas 4 and line 2 large baking sheets with baking parchment. Put the butter, sugar, egg yolk, vanilla and ¼ tsp salt into a large bowl and beat with a wooden spoon until smooth. Stir in the flour to make a stiff dough, then shape into 2 discs, cover with cling film and chill for 10 mins.

2. With plenty of extra flour on the work surface and rolling pin, roll a batch of dough to the thickness of a £1 coin. Stamp out as many 7cm rounds as you can. In half of the rounds, stamp out 2 eye sockets with an apple corer, then use well-floured fingers to pinch the jaw shapes. Lift onto the baking sheets. Bake for 15 mins or until pale golden, then cool for 2 mins before lifting onto a wire rack.

3. Sandwich the cold biscuits together with the jam. Mix the icing sugar with 4 tsp water until smooth, divide into 3, then colour as you like. Put into piping bags, snip off the tips, then pipe spooky patterns and faces onto the skulls.

Make it simpler

To make the recipe simpler for young children, there’s no need to stamp out the eye shapes – just shape the jaws and bake. Stick on round sweets or pipe on eyes with writing icing as part of your decoration.

Savoiardi Biscuits Ingredients

1 cup oil

3/4 cup sugar

lemon rind of 1 lemon

1 drop of lemon essence

550g self raising flour sifted

Savoiardi Biscuits Method

In a large bowl beat eggs, sugar, oil and essence until light and creamy then you should fold in the rind and flour. With moist hands roll into balls and flatten. Bake the Savoiardi Biscuits in a moderate oven until golden brown then let cool on the tray.

Rör rumsvarmt smör och socker poröst. Blanda mjöl, vaniljsocker och bakpulver och tillsätt det. Rör ihop till en deg. Använder du matberedare tillsätter du allt från början, fettet kylskåpskallt och skuret i bitar. Rulla degen till en längd och skär den i 20-22 bitar. Rulla dem till kulor och lägg dem i bakformar av papper. Gör en fördjupning i varje kaka och lägg i en syltklick. Grädda i mitten av ugnen 10-12 minuter.
